I love cooking television shows; I like watching Buddy Valastro’s Show, Kitchen Boss, where he teaches traditional family and friends recipes or recipes from some restaurants that he goes to. I have the impression that all dishes that he makes are absolutely tasty because he uses a lot of spices. I think this is the reason why I like his recipes. One day, in his show, he made a super easy fried rice recipe. So, this rice is always the main dish when I make orange chicken at home. You can be sure that this combination is more than a perfect match! This dish is made with cooked rice. Well, do you know those small rice containers that clog the shelves of our fridge or freezer, the famous leftovers from lunch? Now, that rice has a happy ending! Another thing, it yields so much, so, it’s a great choice for you to make it for a family lunch!

                 Total time: 30 minutes                              Serves: 6 - 8 people

- 1 tablespoon vegetable oil

- 2 eggs

- 2 tablespoons sesame oil

- 2 large garlic cloves, crushed

- 1 small onion, chopped in small cubes

- 2 tablespoons fresh ginger, grated

- 1 cup carrot, cut into thin slices

- 1 cup turkey smoked breast or ham, chopped in small cubes

- 1 cup frozen peas

- 2 cups cooked rice (brown or white)

- 3 tablespoons soya sauce

- 3 tablespoons hoisin sauce

- 2 tablespoons peanut (optional)

- 1 cup green onion, chopped

1. Heat the vegetable oil in a wok. Beat the eggs with pinch of salt, fry and break it up into small pieces, use a spatula to scramble the egg and reserve;

2. At the same wok, heat the sesame oil, grill garlic, onion and ginger;

3. Add carrots and put a little bit of water, just to cook them;

4. Next, put smoked turkey breast or ham, peas and cook for a few more minutes;

5. Then, add cooked rice (break the rice up into individual grains before adding), soya sauce, hoisin sauce, egg, a little bit of water, mix well and cook until the flavours match;

6. Finalize with green onions, peanut and serve hot.
