GUINNESS CAKE

 

              Total time:  1 hour 20 minutes                         Serves: 12 slices

 

Ingredients:

- 250 ml de black beer

- 250 grams unsalted butter

- 75 grams cocoa powder 100%

- 400 grams caster or brown sugar

- 142 grams sour cream*

- 2 eggs

- 1 tablespoon vanilla extract

- 275 grams plain flour 

- 1 teaspoon bicarbonate of soda

- 1 teaspoon baking powder

 

 

Method:

1. Preheat the oven to 180°C;

 

2. In a pan, add the beer, butter, cocoa, sugar and melt all ingredients in a low heat until you get a homogeneous mixture;

 

3. Beat the eggs, the vanilla, and sour cream until creamy;

 

4. Then, slowly, add the melted mixture to the cream and continue beating;

 

5. Finally, put flour, bicarbonate and baking powder, sifted. Mix well to combine;

 

6. Pour the cake batter into the greased and lined tin (23 cm) and bake for 45 minutes to an hour. Then, leave to cool.

 

 

Frosting:

- 300 grams cream cheese

- ½ cup icing sugar, sifted

- Zest of one lemon

 

Method:

1. Mix all ingredients and reserve in the fridge. When the cake is cold, spread on top of the cake.

 

 

*Sour cream

Ingredients:

- 1 cup whole milk

- Juice of one lemon

 

Method:

1. Mix all ingredients with a fouet until mixture gets more consistency and leave to rest for 30 minutes before using it.

RAIDING THE KITCHEN FOR A NIGHT SNACK

I know someone, whose identity I’m not gonna reveal and when he is feeling stressed, he attacks the chocolate BIS in the middle of the night, can you believe that? This guy puts 10 BIS bars in a small bowl and turns on the microwave for 20 seconds, just to melt the chocolate. So, he claims that the chocolate keeps crispy! The second “night crime” is committed with farinha láctea or Neston that is mixed with sugar! One day, this someone  bumped into the door because I locked the kitchen door, just to scare him (hahaha!). I’m so tired of saying: “Stop bringing theses temptations home because, certainly, the “night crime” will be done”. But, my words never cause any effect in his mind; this guy is totally addicted to chocolate and coke! I confess that I’m not a chocolate fan, but, sometimes, to please him I make something “darker”. I’m always looking for the perfect chocolate cake. One day, I came across the Guinness cake, by the fantastic Nigella.  Her cakes are always tasteful! This Guinness cake has a wonderful darker colour and a spectacular texture. It is one of my favourite chocolate cakes, even more when the frosting is cream cheese, which is very close to a velvet cream layer with lemon fragrance...
